Step 1: Preheat the oven to 400°F (200°C). Peel and dice 1 large butternut squash into 1-inch cubes. Toss with 1 tbsp olive oil and season with salt and black pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and caramelized.
